Since its establishment in 2019, Burtech Family Vineyard has rapidly ascended in the wine industry, earning prestigious accolades, including 14 wines rated 90-plus by Wine Enthusiast and the distinguished Hidden Gem of the Year award. Resting on the picturesque San Diego County coast, the 11-acre vineyard features 3,500 vines and sources grapes from renowned Sonoma vineyards such as Sangiacomo and Annadel Vineyard. Burtech’s impressive portfolio includes merlot, chardonnay, sauvignon blanc, and a sparkling rosé crafted entirely from pinot noir, each reflecting the rich terroirs of California’s celebrated wine regions.

Through this partnership, Schubach Aviation’s discerning clientele will gain exclusive access to Burtech’s limited-quantity reserve wines, meticulously selected to enhance the in-flight dining experience. These exceptional wines are complemented by a sommelier-created pairing menu, designed to harmonize perfectly with Chef Redzikowski’s seasonal gourmet offerings. From fresh seafood and vibrant salads to curated charcuterie boards and refined main courses, each dish is crafted to delight at 41,000 feet.

Notable selections include the Mediterranean Mezze Platter featuring halloumi cheese, burrata, and eggplant dip; the Baja Bluefin poke with avocado and spicy shoyu; and the harissa-grilled shrimp paired with Rancho Gordo chickpea salad. To end on a sweet note, the butterscotch pudding with caramel and Maldon sea salt is an indulgent finale.

In addition to the wine list is a selection of Jet Fuel cocktails, including Bodega Boy with mezcal, toasted rice, coconut, lime, and mango; Easy Street with vodka, elderflower, lemon, and cucumber; and The Jetsetter, with tequila, house curaçao, and lime.

“We’re thrilled to include Burtech Family Vineyard among Schubach’s world-class partners,” says Kimberly Herrell, Schubach Aviation co-owner and CEO, in a press release. “The winery’s exceptional offerings will only enhance our clients’ in-flight experience.”
