When Catch debuted in 2011, New York’s Meatpacking District was already one of the city’s most vibrant neighborhoods, and the restaurant quickly became one of its defining destinations. Its combination of impeccably executed seafood, inventive sushi, glamorous design, and unmistakable nightlife energy struck a chord with diners looking for more than just an exceptional meal. Catch offered an experience that felt distinctly New York, where dinner naturally flowed into cocktails, conversation, and an unforgettable evening.

Over the next 15 years, Catch expanded into some of the country’s most competitive hospitality markets, including Los Angeles, Las Vegas, Aspen, Miami Beach, Dallas, and Scottsdale. Rather than simply replicating the original restaurant, each location embraced its surroundings while maintaining the qualities that made the brand instantly recognizable. Whether overlooking the Hollywood Hills, steps from the Las Vegas Strip, or in the heart of Scottsdale Fashion Square, every Catch carries the same unmistakable sense of occasion.

Dining trends evolve, guest expectations rise, and concepts that once defined an era must continually reinvent themselves to remain at the forefront of the industry. That evolution became especially evident with the arrival of Catch Scottsdale, followed by the ambitious transformation of its longtime West Coast flagship in Los Angeles.
Catch Scottsdale Embodies a New Chapter

When Catch announced its arrival in Scottsdale in 2025, expectations were understandably high. The city has emerged as one of the country’s premier luxury destinations, attracting world-class hotels, acclaimed chefs, and ambitious restaurant concepts eager to establish a presence in one of America’s fastest-growing markets. Rather than simply bringing an existing concept to Arizona, Catch seized the opportunity to introduce its next chapter in a city that values exceptional hospitality as much as vibrant social dining.
Having now experienced Catch Scottsdale firsthand, it’s clear the restaurant delivers on that promise. From the moment guests step inside, there is an unmistakable sense of luxury that feels both inviting and sophisticated. The expansive dining room is striking without being ostentatious, balancing warm materials, dramatic lighting, lush greenery, and thoughtfully layered design elements that create an atmosphere equally suited for a celebratory dinner or an elegant night out.


More importantly, the substance matches the spectacle. During our visit, the food was impeccable, the service polished and attentive, and the entire evening unfolded with the precision expected from a restaurant operating at this level. The menu retains the shareable seafood, sushi, and signature dishes associated with Catch, but the overall experience feels increasingly focused on culinary execution, making it easy to understand why guests initially come for the atmosphere and equally easy to imagine returning solely for the food.
There is also something distinctly Scottsdale about the restaurant’s sense of abundance. The luxurious dining room, fashionable crowd, beautifully presented dishes, and constant movement throughout the space fit naturally within a city that has rapidly emerged as one of the country’s leading destinations for high-end hospitality. Catch did not simply arrive in Scottsdale with a familiar name; it opened a restaurant that feels exceptionally well-suited to its surroundings and offers a compelling glimpse into the future of the brand.
A New Era Above Melrose

That future is also taking shape more than 350 miles to the west, in Los Angeles. In April 2026, Catch LA unveiled a comprehensive transformation as the iconic rooftop restaurant approached its 10th anniversary. Since opening above Melrose Avenue in West Hollywood, the restaurant has become synonymous with sunset dinners, celebrity sightings, rooftop celebrations, and a distinctive combination of Hollywood glamour and California ease.
A decade later, Catch Hospitality Group saw an opportunity to reimagine the restaurant for a new generation of diners. “We’re refining the experience while staying true to what’s made Catch such a staple in Los Angeles,” Birnbaum explains. The transformation extends throughout the restaurant, introducing a more premium, intimate, and sophisticated experience that preserves the original’s energy while reflecting Catch Hospitality Group’s direction today.


Rockwell Group redesigned the space with an aesthetic inspired by Desert Modernism, introducing auburn reds, terracotta tones, organic textures, and clean architectural lines alongside the brand’s signature green. Guests still make the familiar ascent to the third-floor rooftop, but the experience now unfolds through a greenery-lined walkway before opening into a dramatically reimagined dining room. A red marble bar and tri-color marble flooring anchor the interior, complemented by woven drapery, custom banquettes, and patterned seating, while the glass-paned roof preserves the indoor-outdoor character that has long defined Catch Los Angeles, and new furnishings and a retractable awning enhance the terrace’s garden-like atmosphere.
Putting the Food at the Center of the Experience

Perhaps the most significant change at Catch Los Angeles is not visual at all. The restaurant has adopted a renewed food-first philosophy led by Culinary Director Michael Vignola, sharpening its focus on pristine seafood, premium ingredients, refined technique, and the bold flavors that have long been central to the the resturant’s identity. The approach reflects a broader evolution within Ctach Hospitality Group, as the company places greater emphasis on the culinary experience at the heart of its restaurants.
The sushi and raw program remains fundamental to the menu, featuring premium fish flown in from Tokyo’s Toyosu Market. New dishes include Angry Lobster Mafaldine with citrus garlic butter, Crudo di Catch with salmon, tuna, hamachi, and yuzu vinaigrette, and a Tuna Niçoise Rice Cake topped with bluefin toro, osetra caviar, whipped egg yolk, and Castelvetrano olives. Other additions, including Ahi Tuna Pizza and Miso-Mushroom Stone Axe Wagyu, demonstrate the kitchen’s increasingly ambitious direction, while longtime favorites have also been reconsidered, including the original Pretzel Bread, which has evolved into the Pr’sant, a Pretzel Croissant Pull Apart Bread served with house-made honey mustard butter.


The cocktail program has undergone a similar transformation under Beverage Director Lucas Robinson. Techniques including cryovac infusion, sous vide extraction, clarification, fat washing, and in-house carbonation bring greater complexity to a menu featuring new creations such as the Catch Filthy Martini, Fluffy Margarita, Tomato Martini, and Matcha Macadamia Negroni. The wine program, curated by Wine Director Emily Buse, further reinforces the restaurant’s move toward a more comprehensive and sophisticated dining experience, while approximately half of Catch’s most beloved cocktails remain on the menu as a nod to the restaurant’s decade-long history.
The Evolution of an American Restaurant Brand


The latest chapters in Scottsdale and Los Angeles reveal a great deal about the state of Catch today. Fifteen years after opening in New York, the company is no longer simply replicating the formula that made its original restaurant successful. It is refining that formula, drawing on more than a decade of experience to create restaurants that retain Catch’s energy and atmosphere while placing greater emphasis on design, culinary execution, service, and the complete guest experience.
Catch Scottsdale demonstrates what the brand can accomplish when entering a new market with 15 years of experience, while Catch Los Angeles represents the other side of that evolution: the willingness to revisit one of its most successful restaurants and invest in what it needs to remain relevant over the next decade. “More elevated” and “more intentional” are the words Birnbaum uses to describe the evolution of LA, but they could just as easily describe the direction of the brand itself.
